Welsh Leek Mac n Cheese

Enjoy the blend of tradition and comfort in each spoonful by upgrading the classic macaroni and cheese with a Welsh leek twist. Creamy, cheesy macaroni gets a flavourful boost from buttery sautéed leeks. Ideal for family dinners or gatherings, this dish adds a touch of comfort to any occasion.

 

– 300g macaroni pasta

– 3 large leeks, thinly sliced

– 50g Castle Dairies Salted Welsh butter

– 3 tbsp plain flour

– 500ml milk

– 200g grated Welsh cheddar cheese

– 100g grated mozzarella cheese

– Salt and pepper, to taste

– 1/4 tsp nutmeg

– 50g breadcrumbs

  1. Cook macaroni as per packet instructions, drain, and set aside.
  2. Sauté leeks in Castle Dairies Salted Welsh Butter until soft; set aside.
  3. Make roux with flour and butter in the same pan.
  4. Whisk in milk until smooth and thickened.
  5. Add Welsh cheddar and mozzarella to create a creamy sauce.
  6. Season with nutmeg, salt, and pepper.
  7. Mix in macaroni and sautéed leeks.
  8. Transfer to baking dish and top with extra cheddar.
  9. Sprinkle breadcrumbs over the top.
  10. Bake at 180°C for 20-25 minutes until golden.
  11. Cool slightly before serving alongside a side of garlic bread!
