- Cook macaroni as per packet instructions, drain, and set aside.
- Sauté leeks in Castle Dairies Salted Welsh Butter until soft; set aside.
- Make roux with flour and butter in the same pan.
- Whisk in milk until smooth and thickened.
- Add Welsh cheddar and mozzarella to create a creamy sauce.
- Season with nutmeg, salt, and pepper.
- Mix in macaroni and sautéed leeks.
- Transfer to baking dish and top with extra cheddar.
- Sprinkle breadcrumbs over the top.
- Bake at 180°C for 20-25 minutes until golden.
- Cool slightly before serving alongside a side of garlic bread!
