Method
Preheat the oven to 180 fan
Put the butter, 4 table spoons honey, juice of 1 whole lemon, 5 sprigs rosemary, salt & pepper and chopped garlic into a saucepan and heat on low for 15-20 minutes until all butter has melted and flavours have infused
Lay your chicken thighs out in a deep oven roasting tin/ pot and pour the sauce over them evenly
Chop up 2 onions and 1 lemon and evenly place them in between the thighs
Squeeze a little bit more honey over the tops of your thighs and season with more salt and pepper
Cover with foil and cook in oven for 35 mins
Remove foil and cook for a further 5 minutes until chicken thighs are browned on top
