Chocolate Orange cookies

Ingredients

200g Castle Dairies Welsh salted butter – softened
150g caster sugar
250g light brown sugar
1 teaspoon vanilla
2 eggs
350g plain flour
1 tea spoon bicarbonate soda
1/2 tea spoon baking powder
1/2 teaspoon salt
1 large orange (fully zested & 1 table spoon of the juice)
Chocolate chips

Method

Preheat oven to 180c

Prepare baking tray with greaseproof paper

1.Mix the caster sugar & brown sugar with the softened butter until all lumps are gone

2.beat in eggs and vanilla

3.sieve in the flour, bicarbonate soda, baking powder & salt then mix until combined

4.Add your orange zest, table spoon on orange juice and the chocolate chips and mix until all ingredients are well combined.

Depending on how big you want your cookies, scoop out 2-3 tablespoons of mix, mould into a ball then add to the baking tray. Make sure to leave a few inches between each ballĀ  as they spread during baking.

You want to bake these cookies for about 8-10 minutes and take them out as they just start to turn brown. They may look a little underdone but this is what makes them nice and gooey / chewy in the middle.
